As a super busy Gig Harbor dentist, I’m always on the move–that’s why this recipe is just perfect! With just three ingredients and three minutes you can make super healthy chocolate treats.
Everyone’s been talking about the health benefits of coconut oil and there’s no doubt that dark chocolate has great health benefits as an antioxidant. The problem with chocolate, however, is that it’s tough to find without a lot of sugar and has less than ideal fats and/or soy.
I regularly whip together these treats. You can fill them with whatever you have on hand and like. I use nuts, peanut (or almond) butter, shredded coconut, and even banana slices.
You’ll need the following:
Stevia – I like Nu Naturals because it mixes easily.
Cocoa powder – I like using the raw organic cacao powder pictured above. It can be found on Amazon.
1 Silicone mini muffin tin
In a Pyrex measuring cup add the following:
1/3 cup cacao powder
1/3c (65 grams) coconut oil
1/2 teaspoon of Stevia
Tip: You can use a kitchen scale to keep dishes to a minimum.
Pop it in the microwave for 30 seconds.
Mix and pour the mixture into the muffin tins. If you’re using nut butter, just do a thin layer and put it in the freezer for a few minutes before adding the rest of the mixture over the top. When I use bananas, I’ll place them directly into the muffin pan and pour the chocolate over the top, then just use a knife and lift the edge of the banana so the chocolate can get underneath.
Step 4 (optional):
The treats in the photo are banana coconut. I mixed in 1/3 c shredded coconut with the chocolate before covering.
Banana treats need to stay in the freezer, but nut butter treats can stay in the refrigerator.
Enjoy while still feeling guilt-free!
